One of my favorite sandwiches, is the Cubano. It is the national sandwich of Cuba. If you love pork, this is the sandwich for you! It features roasted pork, and deli sliced ham. I don't specifically roast pork, for this sandwich, but I reserve roasted pork; if I'm making Carnitas or Pulled Pork. Then I season the pork, with a Moho Sauce.
Traditionally, Cuban bread is used. Depending on your location, it can be hard to find Cuban bread. I substituted, using French rolls.
CUBANO
MOHO SAUCE:
2 Tablespoons lard, or olive oil
3 Roasted garlic cloves
1 Tablespoon orange peel, grated
1 Teaspoon lime juice
1/2 Teaspoon chili powder
1/2 Teaspoon cumin
1/2 Teaspoon oregano
1/2 Teaspoon Righteous Seasoning
PORK:
Lard, for frying
4 Ounces roasted pork, sliced
DELI HAM:
3 slices deli ham (Ham Off The Bone)
BREAD AND CONDIMENTS:
1 (10 inch) French roll
2 Tablespoons mayonnaise, optional
1 Tablespoon mustard
2 Slices Swiss cheese
Dill pickles, sliced, to your liking
DIRECTIONS:
In a small bowl, combine moho sauce ingredients. Set aside. Heat a griddle, or large frying pan, over medium high heat. Melt lard. Place roasted pork on griddle. Top with moho sauce. Heat pork thoroughly, flipping pork, and allowing the moho sauce, to season the pork. Heat ham, on griddle. To prepare sandwich: Spread mayonnaise and mustard, on both sides of bread. Place 1 slice of cheese, on each side of bread. On bottom half of bread, layer pork, ham, sliced pickles. Place top of roll onto sandwich. Place sandwich on heated griddle. Place a bacon press over sandwich, and smash the sandwich, gently. Allow each side to brown and crisp.
