This is a new recipe, that I came up with, because I had an abundance of French Rolls. Wanting to use them up, and it was time for breakfast. I thought I would use the classic, Egg In A Picture Frame, recipe as inspiration.

There's nothing Earth shattering. I just cut two circles, in the French Roll, and added ham. I found that I prefer these over regular sandwich bread. The French roll is thicker, and if you prefer over easy eggs, there is less chance of you over cooking your egg. You also get more bread to dip into the yolk. The added ham, just rounds out breakfast. Wanting to have a fun name, to go with this fun breakfast idea, I named this recipe, Chicken In The Pigpen. It's my new favorite breakfast!

CHICKEN IN THE PIGPEN
Ingredients:
1 French roll, cut in half (vertically), two holes cut out
Butter
Oil
2 Deli ham slices, cut into circles
2 Eggs
Directions:
Heat a griddle, or frying pan, over medium high heat. Cut French roll, vertically. Using a biscuit cutter, that will fit into the inside of the rolls, cut two circles, in each half of the French roll. Butter Both sides of French roll and circle cut outs. Set aside. Using the same biscuit cutter. Cut circles out of the deli ham. Oil and butter the griddle. Toast one side of the French roll, and circle cut outs. Flip Rolls and circles, and continue toasting. Add a few drops of butter and oil into a French roll circle. Crack the egg into the oiled circle. Place a skillet lid over the egg, so the egg can cook through. If any egg white has spilled over the sides of the French roll, you can clean that up, by scraping away, with a spatula. Grill ham circles. Flip egg, gently, and cook a minute or so. To serve: Place French roll, with cooked egg, on a plate. Place cooked ham, in the remaining hole. Serve with toasted circles.
