P B & J BRIOCHE FRENCH TOAST
Peanut Butter Sandwich:
4 Slices brioche
Peanut butter, to your liking
Jelly, to your liking
Batter:
1 Teaspoon cinnamon
1 Teaspoon sugar
1/2 Teaspoon vanilla
1/4 Cup heavy whipping cream
2 Eggs
Oil for frying
Butter for frying
Sugar to caramelize and crisp
Toppings:
Butter
Powdered sugar
Cinnamon
Pancake syrup
Directions:
Heat griddle, to 350, or large frying pan over medium high heat. For each serving: make a peanut butter and jelly sandwich, spreading peanut butter on both slices of bread. Keep jelly in the center of bread, so it does not leak out. Gently press edges together. Set aside. In a shallow bowl, mix cinnamon, sugar, vanilla, and whipping cream; until smooth. Whisk in eggs, until well combined. Add oil, and butter to coat the griddle, or frying pan. Dip peanut butter and jelly sandwich, in batter, coating both sides. Place coated sandwich onto hot griddle. Let cook for 2-3 minutes, until golden brown. Flip, and continue cooking. Lightly sprinkle with sugar, to caramelize and crisp. Flip and repeat. To plate: cut French toast, on the diagonal. Sprinkle with cinnamon, and powdered sugar. Top with butter and pancake syrup.
