Chicken Salad Lettuce Wraps


I'm on a salad kick, and Chicken Salad, is one of my favorites. The recipe is versatile. In the photo, I used celery, red onion, and apple. Lately, I swapped the celery for dried cherries. I think the cherry version is my favorite.



Not only are the ingredients versatile, but you can change how you serve it. Pictured, are Chicken Salad Wrap, and Chicken Salad Sandwich. Alternatively, you can roll into a pinwheel. Or scoop over salad greens. Whatever you choose, it is going to be delicious.




CHICKEN SALAD LETTUCE WRAPS

 

WRAPS:

1 Head butter lettuce, cleaned, dried, leaves separated, refrigerated

 

FILLING:

2 Cups chicken, cooked, chopped

1 Cup (1 large) red delicious apple, cleaned, cored, diced

1 Cup celery (optional)

1/4 Cup red onion, diced

3/4 Cup mayonnaise - or - Greek yogurt

1/2 Teaspoon onion powder

1/2 Teaspoon garlic powder

1/2 Teaspoon pepper

1/2 Teaspoon paprika

 

OPTIONAL MIX INS:

Dried fruit:  cranberries, raisins, cherries

Nuts:  walnuts, pecans, almonds

 

INSTRUCTIONS:

Clean lettuce; then refrigerate. Toss apples with lemon juice, in a large mixing bowl. Combine remaining filling ingredients. Serve with lettuce leaves. Once plated, scoop filling into each leaf. Roll, as you would a burrito. Makes 3 ½ Cups.
