Choose A Chip Cookies, are my go-to oatmeal cookie recipe. I've been baking these cookies, since I found the recipe, in the Disney Cookbook, Fun Family Recipes.
Next you stir in flour, salt, baking soda, and cinnamon. The cinnamon is optional. I never add it.
Oatmeal gets stirred in.
Once the basic dough is made, you can have fun making combinations, of mix-ins. Sometimes, I split the dough in half, and vary the combinations. The top photo is the classic Oatmeal Raisin Walnut Cookie. The bottom photo is Cranberry White Chocolate Chip Pecan Oatmeal Cookie. Wow! That was a mouthful. I think I'll call them Cranberry Chip Oatmeal Cookies. Haha!
I find it easier, to work the dough, directly on the counter. It makes it easier, to make sure the ingredients are dispersed, throughout the cookie.
These cookies bake for 10 - 12 minutes, in a 350 degree oven. I did notice, that when I used a half sheet baking tray, they did take longer to bake. Ideally, you want them to have a slightly browned color.
CHOOSE A CHIP COOKIES
Ingredients:
3 Sticks butter, softened
1 Cup light brown sugar
1/2 Cup sugar
2 Eggs
1 1/2 Teaspoons vanilla
2 Cups all purpose flour
1 Teaspoon baking soda
1/2 Teaspoon salt
1/2 Teaspoon cinnamon (optional)
4 1/2 Cups quick oats
1 Cup dried fruit, your choice
1 Cup chocolate chips, your choice
1 Cup chopped nuts, your choice
Directions:
Cream butter and sugars, until light and fluffy. Add eggs and vanilla. Beat for 2 minutes. In a small bowl, sift flour, baking soda, and salt. Mix flour with creamed butter. Stir in oats. Stir in fruit, chips, and nuts; incorporating well. Drop by spoonfuls, onto a baking sheet. Bake at 350 for 10-12 minutes, until lightly browned.
