This is one of my favorite recipes. I wanted a rich looking banana bread. I incorporated whole wheat flour, and molasses, to give this bread flavor, and coloring. I then topped it with caramel, and oatmeal. You can use nuts, if you prefer; but the oatmeal is a good replacement, for those who can't eat nuts. I hope you enjoy this recipe.
LANA'S BANANA BREAD
Bread:
1 1/4 Cups all purpose flour
1/2 Cup whole wheat flour
3/4 Teaspoon baking soda
3/4 Teaspoon salt
1 Tablespoon butter sprinkles (optional)
1 Cup banana, mashed
1/3 Cup buttermilk
3/4 Teaspoon vanilla
1 Teaspoon molasses
3/4 Cup sugar
1/3 Cup butter, softened
1 1/2 Large Eggs
Topping:
2 Tablespoons caramel sauce
1 Tablespoon oatmeal
Directions:
Grease a 9X5X3" loaf pan, with Crisco. Line, the bottom of loaf pan, with parchment paper. Set aside. Preheat oven to 350. In a medium sized mixing bowl, whisk all purpose flour, wheat flour, baking soda, salt, and butter sprinkles. Set aside. In a medium sized mixing bowl, whisk bananas, buttermilk, vanilla, and molasses. Set aside. In a large mixing bowl, beat sugar and butter. Blend in eggs, until light and fluffy. Stir in half of the flour mixture. Stir in banana mixture. Stir in remaining flour mixture, just until incorporated. Spoon, evenly, into prepared loaf pan. Drizzle caramel sauce, over top of batter. Sprinkle with oatmeal. Bake for 60 - 65 minutes, until a toothpick inserted, in the center, comes out clean, bread bounces back when touched lightly with finger, edges start to pull from the pan slightly.
