Jason's Teriyaki Lo Mein


This is a fun dish, that my son and I came up with. It is super easy, and customizable, to your preferences. A perfect summertime dish, that is easy to put together. You can omit the meat, and have the perfect vegan meal, for Meatless Monday. Photo is Spam Lo Mein.

JASON'S TERIYAKI LO MEIN

TERIYAKI SAUCE:
1 1/2 Teaspoons corn starch 
1/4 Cup sugar
1/4 Cup low sodium soy sauce
1/8 Cup rice wine vinegar
1 Teaspoon chili oil (optional)

LO MEIN:
6 Ounces meat, chopped (any combination of: beef, chicken, pork, shrimp, spam, etc.)
2 Tablespoons oil
Righteous Seasoning, to taste
3 Cups vegetables, chopped (any combination of: bell pepper, broccoli, cabbage, carrot, cauliflower, celery, mushrooms, onion, snow peas, zucchini, etc.)
2 Packages Top Ramen soup, discard seasoning
4 Cups water
2 Tablespoons oil

DIRECTIONS:
Mix sauce ingredients, in a small mixing bowl. Set aside. If adding meat: Heat a skillet, over medium high heat, with oil. Add choice of meat. Sprinkle with Righteous Seasoning. Cook thoroughly. Set aside. Add vegetables, ramen, and water, to a Dutch oven. Bring to a boil. Strain water. Return to Dutch oven. Stir sauce into noodles and vegetables, over medium high heat. Continue stirring, until noodles are covered in sauce. Stir in meat.  Makes 2 large servings.

VARIATIONS:

VEGETABLE: combination of vegetables, ramen

BROCCOLI BEEF:  onion and broccoli, sirloin strips, ramen

MUSHROOM CHIKEN:  onion and mushrooms, chicken, ramen

FUN LO MEIN:  combination of vegetables, combination of meats, ramen
