Cowboy Potatoes

Cowboy Potatoes are sometimes called Country Potatoes. I use the two names interchangeably. They are kicked up Home Fries. Cowboy Potatoes, are a favorite, of my husband. He orders these, when we go out for breakfast. I don’t make Cowboy Potatoes often, but I’m always happy when I do. The trick to this recipe, is to let the potatoes have contact with the skillet, a few minutes so that they can brown. There is no stirring. Just flip the potatoes when they brown. Continue the browning process, until they are as brown as you like them. Add oil just before you flip, each time. This keeps the potatoes, soft.

COWBOY POTATOES

INGREDIENTS:
4 Large russet potatoes, microwaved, chopped
3 Tablespoons cooking oil, 1 tablespoon added at a time, while cooking 
1/2 Green bell pepper, diced
1/2 Red bell pepper, diced
1/2 Teaspoon Righteous Seasoning

DIRECTIONS:
Microwave potatoes to fork tender. Chop potatoes. Heat 1 tablespoon oil, in a large skillet, or griddle, over medium high heat. Place potatoes, peppers, and onion in skillet, in an even layer. Season with Righteous Seasoning. Let potatoes brown, a few minutes without flipping. Add 1 tablespoon oil, then flip potatoes, and let brown a few minutes more. Add 1 more tablespoon oil, then flip potatoes again. Continue browning, as desired. Adjust seasoning, if needed.
