Ginger, Spice, & Everything Nice Oatmeal

What to do, when you have a lot of dried fruit in your pantry? Make oatmeal! I like the way this recipe turned out. It’s the right amount of sweetness, from the dried fruit. It doesn’t need additional sweetener. The warm spices balance the ginger. This is a new breakfast favorite. 


Here’s a tip: if you want the creamiest oatmeal, soak the oats overnight. The fruit and oats are hydrated.


GINGER, SPICE & EVERYTHING NICE OATMEAL 

 

INGREDIENTS:

1 Dried date, diced

1 Dried pineapple ring, diced

3 Dried tart cherries, diced

1 Sliver crystallized ginger

1/8 Teaspoon cardamom 

1/4 Teaspoon cinnamon 

1/4 Cup quick oats

1/2 Cup water

 

TOPPINGS:

Butter

Cream

Maple Syrup

Milk

Nuts

 

DIRECTIONS:

Mix ingredients, in a microwaveable cereal bowl. Microwave on high 1 minute. Stir. Microwave up to 30 more seconds, watching closely; as oatmeal tends to bubble over. Add toppings, as desired.
